This is hands-on in every sense of the word. No joke!

You will be kneading the dough and hand-forming pasta just like an Italian grandmother. And, while the dough is resting, you'll make a delicious sauce perfectly designed to get caught in all the nooks and crannies of these rustic pasta shapes.

 

You will learn how to shape traditional pasta from many regions of Southern Italy. In addition to the shapes we taught in the original Southern Italian class (orecchiette, cavatelli and spizzulus), you will also learn busiati, strascinati, fusilli, and more.

 

While your pasta dough rests, you will learn how to make the classic Alla Norcina sauce filled with sausage, mushrooms, white wine and cream. It's not from the south but it clings to these pasta shapes like it wishes it was.

The evening ends arround the dinner table, enjoying your efforts with a glass of wine.

Signing up for a class is a firm commitment to attend the class.

Any changes must be made AT LEAST THREE DAYS PRIOR TO EVENT.
