Sugo Al Pomodoro

Sugo al Pomodoro (Tomato Sauce)

Serves 4

 

2 tbsp olive oil extra virgin

1 cup onion yellow, diced

4 cloves garlic, finely chopped

28 oz whole tomatoes canned or 3½ cups fresh tomatoes, chopped

Kosher salt and ground black pepper

1 sprig basil, torn or chopped

 

Heat oil in a large pan over medium heat. Add onion and sweat until softened.

Add garlic.

Lower heat and add tomatoes stirring occasionally as the sauce cooks for 20-25 minutes.

Once sauce has thickened slightly, season to taste with salt and pepper.

Stir in fresh basil.

Serve with pasta.
