Steak with Basil and Balsamic Tomatoes

Serves: 2 - 4 Ingredients: 2 cups grape tomatoes 3 tbs balsamic vinegar 1 handful fresh basil, chopped 2 New York Strip steaks, about 12 - 14 oz each ½ tsp kosher salt ½ tsp black pepper ½ tsp garlic clove, minced Extra virgin olive oil Instructions: Preheat oven to 400°. In a bowl, add tomatoes, a tablespoon of olive oil, balsamic vinegar, salt and pepper. Place on a sheet pan and roast for 20 minutes until the tomatoes just burst. Once cooked, transfer to a bowl, add in the chopped basil and set aside to cool. Place minced garlic in a small bowl and add enough olive oil to make a very loose paste. Season both sides of the steaks with salt and pepper and then drizzle with garlic and olive oil mixture. Heat a tablespoon of olive oil in a sauté pan or grill pan on medium high. Place steaks on pan or grill and cook for 7 minutes without turning or touching them. Flip at 7 minutes and cook another 5 – 7 minutes depending upon desired doneness. Once the steaks are rested, spoon the balsamic tomato mixture over them and serve immediately.
