LOBSTER FILLING FOR RAVIOLI

Enough for 1 lb of pasta
Ingredients:
½ cup firmly packed freshly grated Parmigiano Reggiano
1 tsp fresh lemon zest
2 cloves garlic, minced
8 ounces cooked lobster meat, finely chopped
¾ cup whole-milk ricotta cheese (6 ounces)
Kosher salt and ground black pepper
Instructions:
Combine lemon zest with parm in a medium bowl. Add minced garlic, chopped lobster meat, 3/4 cup whole-milk ricotta cheese, and salt and pepper, to taste. Stir to combine.
Cover and refrigerate until ready to use.
