Learn to Cook At Home - Stock Making in a Nutshell

BONUS: I have included my recipe for chicken stock. Learn to cook at home and make your own stock. It's a great way to use every part of the chicken so there's very little waste.

White Chicken Stock

Makes approximately 2 quarts


  • 5 lbs chicken bones, coarsely chopped

  • 8 oz mirepoix (1 onion, 3 carrots and 2 celery stalks, coarsely chopped)

  • 5 garlic cloves, peeled and crushed lightly

  • 1 bouquet garni (wrap fresh thyme, parsley, and 1 bay leaf in cheesecloth)

  • 1 tbsp whole black peppercorns wrapped in a sachet

  • Cold water to cover

 

Rinse bones.

Cover with cold water.

Bring to a boil over moderate heat.   Boil for 5 minutes.  Pour off water and re-fill the pot with cold water to cover the bones.

Add remaining ingredients.

Simmer for 2½ to 3 hours, skimming frequently.  Do not allow the stock to boil at any point.

Strain through a fine strainer and refrigerate.
