We stuff thick slices of French bread with double cream Brie and Black Forest ham, then dip them in an egg and milk mixture before cooking them in butter until they're golden and crispy. It's a breakfast that's fancy enough for a special occasion, but easy enough for a lazy Sunday morning. So why settle for boring toast when you can have stuffed French toast that'll have you shouting, "Encore!"?
BRIE AND HAM STUFFED FRENCH TOAST
Ingredients
8 pieces French bread, sliced, 1” to 1½” thick
8 thin slices double cream Brie
8 thin slices Black Forest ham (or other smoked ham)
3 large eggs
¾ cup whole milk
2 tbsp sugar
Pinch of salt
1 to 2 tablespoons unsalted butter
Instructions
Preheat oven to 350°.
Using a paring knife, cut a horizontal slit in each bread slice to form a pocket. Wrap one slice of ham around one slice of Brie and stuff into each pocket. Set aside.
In a shallow bowl, whisk together eggs, milk, and sugar until combined. Set aside.
In a large nonstick sauté pan, melt 1 tablespoon butter over medium-low heat.
Place the bread slices in egg mixture, one at a time, letting them soak 5 seconds on each side.
Without crowding, place 3 – 4 slices in the pan, 3 – 4 minutes per side or until golden brown. Transfer to a buttered baking sheet. Repeat with remaining bread, adding more butter to skillet if needed.
Place baking sheet in the oven and bake for 10 – 15 minutes until golden brown and puffed.
Serve with mixed berries and/or maple syrup.
